Fruit Cobbler - Quick Mix Coffeecake 

Mixed up in the morning and baked in a 12 inch cast iron skillet. Soul satisfying.

Saute in a good amount of coconut oil.
Apples, Pears, Peaches
diced and unpeeled.

Add in whole cranberries.

Pumpkin, 1/4 c butter, maple syrup, salt, cinnamon, nutmeg, fresh ginger. Maybe stir in 1 c milk and 3 eggs and vanilla. Bake about 20 minutes to set it. Then top with cake and bake again.

Coffee cake topping:
Mix and place in warm spot:
8 oz milk
2 oz whole milk yogurt
8 oz whole wheat pastry flour
(2-4 oz sourdough starter if desired)

After the flour has hydrated, whip together and stir-in:
1/2 stick (1/4 c) melted unsalted butter OR 2 oz coconut oil
1 egg
3 oz sugar

Gently but thoroughly stir-in:
1 t baking powder
1/2 t baking soda
1/2 t salt

Scrape out onto the hot fruit in the cast-iron skillet.

Top with pecans or walnuts. Sprinkle with washed raw sugar.

Bake 400* convection bake 15-20 minutes until golden.
