Breakfast Casserole - Cottage Cheese 

*cooked sausage or
*diced ham
*or whatever leftovers we have

-Instructions-
Preheat oven convection bake 375*.  Weigh cottage cheese and cheddar cheese in large bowl. Crack in eggs.  Mix in flour, powder, and salt.  Melt butter and add to batter.  Bake 30-40 minutes.  Cool slightly and serve. (Can fill skillet quarter to half full of various fillings and adjust batter size.  Pour batter over fillings.  Some ideas are:  black beans and corn, or 8 oz drained chopped green chilis, or anything leftover, BBQ pork is especially good.)

16 oz cottage cheese
10 eggs
1/2 c flour (2 1/2 oz grain)
1 t baking powder
1/2 t salt
1/4 c melted butter
16 oz shredded cheddar cheese

-Half Recipe-
8 oz cottage cheese
5 eggs
1/4 c flour
1/2 t baking powder
1/4 t salt
2 T melted butter
8 oz shredded cheddar cheese

-Three-Quarters Recipe-
12 oz cottage cheese
8 eggs
1/3 c flour (3 oz grain)
1/2 t baking powder
1/2 t salt
3 T c melted butter
12 oz shredded cheddar cheese
