Pancakes - soaked method 

I wish I could think of a more appetizing way to describe soaking the flour. But it turns whole wheat into smooth fluffy baked goods without the harsh texture of whole grain things.

Pancakes for four of us -

Soak overnight on the counter:
(If I haven't soaked it, I can warm the milk and soak this in a warm oven, turned back off, for 30 min or so)

Mix all together until smooth:
10 oz (2 c) whole wheat pastry flour
10 oz milk
2 oz whole milk yogurt    
(can add 6 oz or less sourdough starter, as well)

In the morning add:

1/4 c (1/2 stick) melted unsalted butter beat with
2 or 3 eggs

Stir together then gently stir in:

1 t baking powder
1/2 t soda
1/2 t salt

Bake on hot pan in coconut oil.
