Waffles - Overnight 

Waffles for your wedding reception. What a happy thought! We did that for a friend!

Base x2 Recipe: Makes about 4 qts. Makes 8 large square belgian waffles. 32 small squares.

2 1/2 lb whole wheat flour
16 oz (2 c) yogurt
40 oz (5 c) whole milk

8 eggs
2 sticks butter

1 T and 1 t salt
2 t baking soda

Base x4 Recipe: Makes about 7 qts. Makes  16 large square belgian waffles, 64 small squares.

5 lb flour
14 c buttermilk: 4 c (32 oz) yogurt and 10 c milk (2 1/2 qt)

16 eggs
1 lb (4 sticks) butter

3 scant T salt
1 T and 1 t baking soda

Base x4 Recipe Mixed 5 times for Blackman wedding: Makes 35 qts. (Used 2 or 3 base recipes.) This was way too much for 300 people.
25 lb flour
5 (32 oz) yogurts
3 1/4 gallons milk
6 1/6 dozen eggs
5 lb butter
salt and soda

For church agape serving 150. Made 3 mixings. Used 2 base recipes for 150 people. (1 left over)
15 lb flour
3 (32 oz containers) yogurt
2 gal milk
4 dozen eggs
3 lb butter
salt and soda
~Just enough for 4 of us:
Mix together until smooth:
10 oz (2 c) whole wheat flour
4 oz (1/2 c) yogurt
10 oz (2 1/4 c) whole milk
Let sit on counter overnight (or all day if you're making them for dinner!)

After batter has rested, Melt:
1/2 stick (1/4 c) unsalted butter
Beat in:
2 eggs

Gently stir in:
1 t salt
1/2 t baking soda (sift through a sieve to get the lumps out)

For extra crispy waffles stir in:
2 T sugar
just before baking in a very hot waffle iron (the hottest setting). Then put them in a 200* or more oven for 3-5 minutes.

Bake in waffle iron and say, "Thank you Lord for feeding my soul!"

~Base Recipe: Makes a little less than 2 qts batter. Makes 4 large square belgian waffles, 16 small squares.

20 oz (4 c) whole wheat pastry flour
8 oz (1 c) whole milk yogurt
20 oz (2 1/2 c)  whole milk

4 eggs
1 stick (1/2 c) melted unsalted butter

2 t salt
1 t baking soda

*Whipping Cream: 1 pint (allows room for a LOT) each base recipe.  Mixed with 1 T sugar and a bit of vanilla.

*Blueberry topping: 2 c water, 4 c sugar, 1/4 t salt. Boil a few minutes to begin forming a syrup. Add 4 c blueberries. Boil until thick. Mix into thawed frozen blueberries which haven't been cooked.

- Toppings used for 2 basex4 batches.
*Blueberries: 10 lb frozen.
*And 15 lb strawberries, cut (with egg slicer) fresh and mixed with jam and sugar.
*And 64 oz marionberry syrup.
*And 2 small squeeze maple syrups.
