Pancakes, Cottage Cheese 

High protein fluffy pancakes!

Larger recipe~
In large bowl whip together:
1/2 c melted butter
14 eggs

Stir in:
24 oz cottage cheese
4 oz yogurt
4 oz milk

Stir in:
1 t baking soda
1 t salt
2 t baking powder
3 c whole wheat pastry flour
    (15 oz soft white wheat grain)

Bake in plenty of coconut oil. The cheese curds will really stick to the pan.
Smaller recipe~
In a medium saucepan melt:
1/4 c unsalted butter

Beat in:
8 eggs

Stir in:
16 oz cottage cheese
2 oz whole milk yogurt
2 oz milk

Measure and mix:
8 oz whole wheat pastry flour
1 t baking soda
1 t salt
1 t baking powder

Stir dry ingredients into the wet ingredients only until mixed. This makes them more fluffy if you don't overmix them.

Bake in plenty of coconut oil on the griddle.
