Pancakes - Oatmeal Thick hearty pancakes. Soaked the night before for better nutrition and vibrant taste. That was then:
-Small Recipe- 4 c oats 4 c buttermilk 2 c flour (10 oz soft white wheat) 1 T sugar 1 T baking powder 1 T baking soda 2 t salt 4 eggs 1/4 c melted butter -Larger Recipe- 6 c oats 6 c buttermilk 3 c flour (15 oz slft white wheat) 2 T sugar 1T + 2t baking powder 1T + 2t baking soda 1 T salt 6 eggs 1/2 c melted butter Combine oats and buttermilk in mixer bowl with whips. Let soften 30 minutes or so, or overnight, whatever! Combine dry ingredients into bowl and mix well with a fork. When oats are softened mix in eggs until combined. Mix in dry ingredients, mixing thoroughly but not too much. Stir in butter. Fry on 375* griddle in butter until golden colored. This is now:
Soak overnight on counter- 4 c oats 10 oz (2 c) whole wheat pastry flour 28 oz whole milk 4 oz whole milk yogurt In morning mix together and stir in- 4 eggs 1/4 c melted butter Mix and stir in- 1 T sugar 2 t baking powder 2 t baking soda 2 t salt Bake on hot griddle in coconut oil.
