Hot Cereal - Rolled oats 

Fluffy and not sticky oatmeal. The flakes are more flavorful with the soak and they are easier to digest. But the unsoaked method yields firmer intact oats, not quite so soggy! Look to the end for Chocolate Chip Cookie oatmeal version.

~Not soaked method:
In 4 qt pot boil:
3 c water
1 t salt

Stir in and keep boiling just a minute:
2 c oats

Turn heat way down but be sure it simmers very gently about 10 minutes with the lid on.

Mix in some milk and butter and serve.

~Not soaked with egg and milk:
In 4 qt pot boil:
2 c water or (3 c water)
1 t salt

Stir in and boil just a minute:
2 c oats (or 3 c oats)

Turn heat way down but be sure it simmers very gently about 5-10 minutes with the lid on.

Mix together:
1 c milk
2 eggs (or 3 eggs)

When oats have absorbed the water gently stir in milk-egg mixture stirring to prevent the egg from cooking too quickly and becoming like a scrambled egg in your oatmeal. This will be silky rich and milky. Cook gently until thick.

Top with butter and maybe a bit more milk, maple syrup, chopped dates and raisins.

*Lindsey says to top your oatmeal with chocolate chips, salted butter, and brown sugar and maybe even a little molasses. Tastes just like a chocolate chip cookie!
~Soaked method:
On the counter overnight soak:
oats in enough water to cover by a couple of inches with a bit of whole milk yogurt added.

For example:
5 c oats with 1 T yogurt or whey mixed into the water.

In the morning:
Boil water equal to the number of cups of oats that you soaked.

If you soaked 5 c oats then boil:
5 c water and
2 t salt

Thoroughly rinse the soaked oats using a colander. Add to the boiling water and stir gently until it returns to a boil. Turn heat way down and when it isn't boiling too hard put the lid on.

At this point you can simmer it gently or leave it on low low to cook more slowly. It should take about 10-15 minutes.

Serve with milk, salted butter, brown sugar, raisins, dates, chopped nuts, etc.

**Add 1 t salt for every 2 c oats. (1/2 t per 1 cup of oats soaked).
