Morning Glories Breakfast cookies! 1 c cornmeal
2 c whole wheat pastry flour 1 t baking soda 1 1/2 t salt 24 oz shredded cheddar cheese 2 c oats 1 1/2 c softened unsalted butter
1/2 c brown sugar 4 eggs 2 T prepared mustard In mixer bowl with cookie paddles, blend butter and sugar until light and fluffy. Blend in eggs (one at a time) until light and fluffy. Add mustard, corn meal, flour, soda and salt and mix all at once until well mixed. Lightly stir in cheese. Lightly stir in oats. Scoop 30 cookies onto 2 ungreased cookie sheets with large scoop, (15 cookies each tray). Flatten slightly with fingers. Convection bake 350* 15-20 minutes on two racks. |
