Baked Eggs 

Nice texture for a change in eggs. Quick and easy for egg sandwiches.

-9x13 size for sandwiches our family-
12 eggs
1/4 c heavy cream or milk
1 t dry mustard
1/2 t salt
dash pepper
big handful of grated cheese
Bake 15-20 minutes at 400*
-Allclad pan or cookie sheet-
18 eggs
1/3 c heavy cream or milk
1 1/2 t dry mustard
1/2 t salt
dash pepper
big handful of grated cheese
ham or bacon
Bake 10-15 minutes at 400*

Preheat oven to 400*.  Mix eggs, cream, mustard, salt and pepper in blender just until mixed (takes only a second).  Pour into prepared pan and sprinkle generously with cheese.  Can add ham or sprinkle crumbled bacon on top.  Bake until puffy and golden, 12-15 min for cookie sheet, 40 min for allclad pan.  Can sprinkle more cheese after baking for sandwiches.
