Huevos Rancheros 

A classic Mexican breakfast, huevos rancheros (translated means ranch eggs) are fried eggs served on hot corn tortillas and smothered in cooked salsa. When you cut into them, the egg yolks mix in with everything—the salsa, tortillas. So good!

Use my Mexican red cooking sauce.

Warm plates in oven.

Fry corn tortillas briefly in just a bit of oil. Place on warm plate.
Spoon and smooth sauce onto hot tortilla. Add a second tortilla just because they are so good!

Fry eggs in avacado oil and butter to give you a bit of crispy edges.

Keeping sunnyside up, slide eggs onto tortillas. Sprinkle with jack or mild cheese if you want. Top with a bit more of my Mexican cooking sauce.
