Hot Cereal - Steel Cut Oats 

Little tender but chewy bits of oats. Sweet and satisfying.

~Soaked Oats
Basic ratio oats to water:
1 c dry oats, soaked overnight to
1 1/2 c boiling water

Oats for 4 people~
Soak:
2 c steel cut oats with just a spoonful of yogurt and water to cover by an inch. Leave on counter overnight.

In the morning rinse the oats well in a colander. Boil
3 c water with
1 scant t salt

Add oats and return it to a boil. Lower heat or turn it off (depending on how quickly you want it to cook) and stir to make sure it is not sticking to the bottom. Cover and let it absorb the water and become soft. The steel cut oats retain some of their chew and don't lose their shape and turn to 'mush' like other grains do. They take about 10-15 minutes to cook.

You can leave it warm for an hour or so without it ruining its texture. Good for folks who are coming through the kitchen at different times!
~Not Soaked Oats
Basic ratio:
1 c steel cut oats
3 c water
1/2 t salt
Cook 10-20 minutes.

~Not Soaked Pressure Pot
4 servings
4 c water (adding milk will burn a little on the bottom of the pot)
2 c steel cut oats
1 t salt
Set to 4 min pressure and let pressure release naturally for 10 minutes. Totally hands off and really good.
-You can use the saute setting to add and quickly warm milk as you serve.
