Pancakes - Mashed Potato 

Fat crispy cakes of mashed potatoes. Use leftover mashed potatoes; you'll always make extra for this recipe. Sourdough starter option here too.

~With sourdough starter
Mix:
4 oz starter
1/4 c whole wheat pastry flour
2 eggs
4 oz (1/2 c) milk
1/4 c melted unsalted butter
Mix until smooth

Gently stir in:
2 c mashed potatoes

Gently stir in:
1 t soda
1 t salt

*I tried this without the fresh flour but the pancakes were too wet and a bit gummy.
2 c mashed potatoes
2 eggs
1/2 c milk
1/4 c melted butter

about 5 oz (1 c) flour
1 t baking powder
1 t soda
1 t salt

Melt butter.  Beat in eggs and milk.  Gently mix in mashed potatoes.  Mix in dry ingredients all at once, mixing gently only until moistened.  Drop by tablespoonfuls  into hot oil on griddle (325*).  Bake until well browned on both sides.  Serve with butter.
