Pancakes, Mashed Potato 

Fat crispy cakes of mashed potatoes. Use leftover mashed potatoes; you'll always make extra for this recipe.

about 1 c flour (about 5 oz grain)
1 T baking powder
1 t soda
1 t salt
2 c mashed potatoes, creamy with
      milk and salt & pepper added
2 eggs
1/2 c buttermilk
1/4 c melted butter

Melt butter into big mixing bowl.  Beat in eggs and buttermilk.  Gently mix in mashed potatoes.  Mix in dry ingredients all at once, mixing gently only until moistened.  Drop by tablespoonfuls  into hot oil on griddle (325*).  Bake until well browned on both sides.  Serve with butter.
