Hot Cereal - Seven Grain Bob's Red Mill seven grain cereal. The basic proportion is:
1 c dry cereal 3 c water 1/2 t salt Boil water, add salt, whisk in cereal. Lower heat to a gentle boil. Cover and cook at least 10 minutes. Continue to lower heat to a very gentle simmer and cook longer.
For four of us: 3 3/4 c water rounded 1/2 t salt 1 1/4 c cereal When it is mostly thick add: 1/4 c unsalted butter Enough salt really makes this cereal good, but it is easy to get too much as well. The butter really boosts the flavor as well. Serve with heavy cream for a rich treat! Add snipped dates, or currants, or of course raisins. Add sliced crispy almonds.
