Potatoes - baked scalloped potatoes 

Baked in two deep sided hotel pan to serve 50-60 people

20 lb potatoes sliced in food processer
1 gallon milk
1 qt heavy cream
5 lb cheddar cheese
1 lb unsalted butter
10 medium onions chopped
4 whole heads garlic
6 T salt
black pepper

Saute onions in butter in two hotel pans until beginning to brown about 10-15 minutes. Add garlic, salt and pepper. Saute another minute or so until fragrant. Add potatoes and milk and cream. Cover and bake about 20 minutes until potato is beginning to be tender. Stir in cheddar cheese and bake uncovered about 30-60 minutes. Hold until needed, at least 20-30 minutes until 'congealed'.
