Zucchini Salads 

Well, I'm getting fat! Need to eat vegetables and zucchini is plentiful at my farm stand all season long!

Raw zucchini with feta --
Diced or sliced raw zucchini tossed with
feta cheese, olive oil, lemon juice (or vinegar), salt and pepper and dill if I have it. I would also add onions!

Hot Mexican Zucchini ==
Dice then saute zucchini and onion in olive oil briefly. Mix in BBQ dry rub spice mix and saute briefly. Serve warm with salsa.
Warm roasted or sauteed Salad --
Saute or roast salted round slices
with onions in olive oil. Toss with pepper, white wine vinegar (or balsamic or other), and a little more oil while warm. Serve warm or room temp. Option: sprinkle with parmesan cheese.

Peel the zucchini with the peeler (or my V slicer) into shaved curls and add to any salad.

Fresh shaved zucchini salad --
Make the dressing:
1/3 cup olive oil
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
a dash to 1/4 teaspoon dried crushed red pepper

For the salad:
Shave 2 pounds medium zucchini and toss with
1/2 cup coarsely chopped fresh basil
1/4 cup pine nuts, toasted
Mix in the dressing and
Shave Parmesan cheese on top
