Tomato Phyllo Pie 

Versatile! Use different cheeses.

In 9x13 pan layer:
1 package phyllo dough (I used Trader Joe's)
Roll the edges up the sides.
Brush with olive oil between sheets.

*You can layer in parmesan cheese to help the layers stick together.
*Or brush with garlic butter.

Top with:
1cup shredded mozzarella
3 medium red and orange tomatoes, sliced
4 ounces crumbled feta cheese
1/3 cup chopped fresh basil

OR Top with:
feta cheese

OR Top with:
parmesan cheese

OR Top with:
1¼ cups ricotta cheese
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh chives
½ teaspoon lemon zest
Salt and pepper, to taste
1½ to 2 lbs tomatoes, sliced to ¼-inch thickness (and/or grape tomatoes, sliced in half)
