Oven Fries 

I hate to call this a vegetable but you buy the potatoes at the vegetable stand! Gives my non vegetable loving family a break. And I did not purchase already prepared potatoes, so I am happy.

Place into preheated 500* oven, my oven will lose 100 degrees just by putting this large sheet into it.

Roast on covection roast 450* 20 minutes. Watch the back and edges, turn sheet if needed and redistribute the oil. But again, watch the oven temp. I don't like to have the oven on preheat so there really is no way to get it back up to a hot temp. You've got to keep it hot. Finish roasting until they are golden brown.

IMPORTANT - Now drain off any extra oil and return to the oven for a few minutes to crisp up and dry out. Check to see if they need any more salt. Use a higher temp if you are ready to eat, but a lower temp if you need a few minutes more.
Cut brown potatoes into wedges which are about 1/4 inch thick at the fat end.

Rinse in cold water in salad spinner a few times to remove the starch.

Soak in very HOT water in salad spinner - 15 minutes.

Drain and use the salad spinner to dry them out!

Right on my big 2/3 sheet pan cover the bottom with olive oil and a teaspoon of salt. Turn the fries out onto the sheet pan. Drizzle with a little more olive oil. With your hands make sure every surface is covered generously with oil. Lay them cut side down. Sprinkle with a bit more salt.
