Bread - Valerie's Oatmeal Bread (Old Recipe) 

Not too heavy or too light, with a rich flavor.

6 c boiling water
2 T yeast + 1 T sugar
1 c very warm water
10-12 c white bread flour
3 c oats
2 c whole wheat bread flour
1 c brown sugar
2 T salt
1/2 c butter

Boil water in tea kettle.  Mix oats, whole wheat flour, brown sugar, salt together in mixer bowl with dough hook.  Mix in butter and boiling water.  BE SURE TO HOLD LID DOWN, IT WILL SPLASH OUT UNDER LID.   When batter is cooled (takes a while) to just warm, dissolve yeast and sugar in the 1 c of warm water, wait a minute until a little foamy, then add the yeast mixture into the batter and stir in rest of white flour until dough no longer sticks to sides of bowl.  Knead 5 minutes on speed #1.  Place in large oiled bowl, turn to oil top and rise in warm oven 45 minutes.  (If you want chewier bread, rise again.)  Punch down and shape into 4 loaves in large greased bread pans.  Rise in warm oven 20 minutes until rounded at tops.  Without taking bread out, turn oven on to 350*.  Bake 40-50 minutes until browned and sounds hollow when tapped.  Cool on racks with towel over.
