Cookies - Perfect Peanut Butter Chewy middles with crunchy edges make this cookie really something! Top with a little salt for a fresh peanut taste! 6 c white flour
1 T baking powder 1 heaping T baking soda 3 c oats, blended into flour 3 c unsalted butter
3 c peanut butter (1 c = 12 oz) 3 c granulated sugar 1 lb brown sugar (2 1/3 c) 6 eggs In mixer with cookie paddles, whip butter, peanut butter, sugars and eggs. Mix in flour, powder, soda, and blended oats. Scoop into small balls with smallest ice-cream scoop onto sprayed cookie sheets. Bake 10-12 minutes at 375*. DO NOT OVERBAKE!!! They will look just slightly golden and puffy and not quite done, but will be too crunchy if overbaked. |
