Muffins - Simple with barley flour 

Sweetened with mostly maple syrup, these are simple but hearty.

Stir together:
15 oz whole wheat pastry flour
6 oz barley flour
2 t baking powder
1 t baking soda
1 t salt

Whip together:
4 oz unsalted butter, melted and cooled
4 oz sugar (turbinado or white)
4 oz maple syrup
3 eggs

Mix in:
10 oz milk

Stir dry and wet ingredients together very gently and only until mixed. Let rest about 5 minutes to hydrate, stir and fold gently one last time, then scoop into muffins.

Bake 12 extra large muffins convection bake 375* 20-25 minutes.
