GF - Orange Cranberry muffins 

Fresh cranberries and fresh orange.

~In bowl mix:
5 oz coconut milk
8 oz namaste gf flour
Stir until smooth. Allow to rest to fully hydrate it.

~Prepare fruit
3 oz mandarin, cut a whole one into small pieces, skins included
OR use a big orange and peel the zest and remove the white and cut small
3-4 oz cranberries

Mix:
1 oz melted coconut oil
1 egg
2 oz honey
3 oz sugar

Stir into the hydrated flour mixture. Stretch and fold in bowl with scraper until smooth.

Stir in the prepared fruit

Gently stir in:
1/2 t salt
1/2 t baking soda
1/2 t baking powder

Scoop into12 muffins

Bake 375* about 15 min until internal temp of 190 - 200.
