GF - Cinnamon Rolls 

from 'the loopy whisk'

~12 cinnamon rolls baked in 9x13
In kitchen aid mixer bowl combine:
14 oz coconut milk
5 g psyllium powder
1 1/2 t salt
2 oz sugar
2 oz coconut oil, melted
2 eggs
2 t yeast
1 t apple cider vinegar (5 g)
Mix vigorously with hand whisk

Gradually mix in:
18 oz namaste gf flour
1/2 t baking powder

Knead and rest in the mixer until it is smooth. Remove to moist or lightly floured counter and stretch and fold or lightly knead until it forms a smooth ball. Takes about 30 min total.

Rest about 15 minutes.

~Mix the filling:
4 oz brown sugar
1/4 c namaste gf flour
1 T cinnamon
1/4 t salt
3 oz softened coconut oil

On moist or lightly floured counter pat dough with moist hands to a large rectangle.

Spread with filling.

Roll up, cut into 12 pieces, OR cut then roll up individually, and arrange in coconut oiled 9x13 baking pan.

Rise in warm place until doubled.

Cover and bake (to keep its own moisture in it and prevent a 'skin' from forming too soon and impeding the rise) 375* for 15-20 minutes. Uncover and bake just until golden.
