Chai Tea Concentrate 

Made with rooibos tea, this is not too sweet and very satisfying. Made with sugar allows the spices to be more prominent. But I love the health benefits and comforting flavor of maple syrup.

~In 8 qt pot
Bring
4 qts water
to a boil

Add:
4 cinnamon sticks
10 whole cloves
20 whole peppercorns
1/3 cup cardamom pods
2 1/2 -3 oz (2/3 cup) fresh chopped ginger
OR use 1/3 c "tea cut" dried ginger
1 teaspoon salt

*Use a large cloth tea bag to add:
1/2 cup loose leaf rooibos tea

Bring to a gentle simmer for an hour

Stir in:
8-12 oz maple syrup
OR 2 1/2 c sugar

Simmer again 15 min or so to bring it all together.

Strain out herbs and remove rooibos tea bag

*If you don't have a large enough tea bag then strain through cloth to remove the rooibos tea.

~To serve
Depending on how strong you want it, you will use 1 part Chai Syrup to 3 or 4 parts milk of your choice. Heat them both til they're your desired temp, froth it if you've got a nifty little frother, and enjoy!

I like 3 parts tea to 1 part warm frothed milk.
