Coffee Cake - Simple Soaked Just a basic cake in which you can mix many different types of fruit. This is a flexible 'soaked' method, which I think makes a more moist cake than mixing wet into dry flour mixture. ~Mix and let sit to hydrate (15 minutes-12 hours):
14 oz yogurt milk or 'buttermilk' 14 oz whole wheat pastry flour -add more milk if it is way too thick. After the hydration time, whip together and stir-in: 4 oz melted coconut oil 2 egg 2 oz sucanat 2 oz maple syrup or honey Add and gently but thoroughly stir-in: 1 t baking powder 1/2 t baking soda 1 t salt ~Stir in blueberries, apple, rhubarb, pear, dried currants, etc. Bake in: -one 9x13 pan -two 9x9 pans ~Bake at bake 400* about 25-40 minutes, until an instant read thermometer reads 190*. You can use convection baking but more delicate cakes have a better texture without the convection.
