Fig Jam 

Made with dried figs. Perfect for winter cooking.

~Makes 24 oz jam
In saucepan bring to a steady rolling simmer:
12 oz dried figs with stems removed chopped small
4 oz granulated sugar
4 oz honey
3 oz balsamic vinegar
2 c water
2 t fresh lemon juice, to taste

Cook for 10 minutes stirring occasionally.

Immersion blend if the pieces are too large for your liking.

Cook another 5-10 minutes until it is as thick as you desire. It will thicken a bit as it cools.

Taste and add an extra tablespoon or two of balsamic vinegar.
