Jam or Compote - Honey or Maple 

Macerate using honey or maple syrup to make a very soft jam or a chunky compote.

In 8 qt pot you can squeeze 6 lb fruit.
~Pear-Apple
Dice pears and apples with the skin on.

Macerate several hours or until the fruit is left floating in its own liquid.

~Base recipe is weight of fruit with 1/4 its weight in honey or maple syrup or sugar.

~For 6 lb fruit use:
24 oz sweetener, 12 oz honey with 12 oz sugar.

~~I like to mix the honey with sugar. I think the sugar really boosts the sweet and the jelling process.

~~Maple syrup is much more liquid than honey.

macerate pears in honey. Cook. Add cranberries just until a few pop.
