Ginger syrup 

You get much more from the ginger by simmering it. Use for kombucha and hot tea.

~1 qt of Ginger syrup
16 oz water
2 oz fresh ginger roughly peeled and diced fine
Cover at a tilt and simmer together gently 1 hour or more.

Cover and steep 2 hours or more.

Strain and stir in 16 oz honey
Juice a lemon into the syrup, including the peel, but not the bitter white part.

Keep in refrigerator.

Use for kombucha or hot tea.
