Kombucha - Rooibos tea 

Before I toss my extra scoby out, use it to make a batch of rooibos tea! No caffeine at all. You could use honey in place of sugar but it wouldn't fizz much.

~To make in 1 gallon jar
Good sized scoby from my regular brewing jar
Steep until cooled:
12 c water at 180*- 200*
1 oz rooibos tea
Strain well and dissolve in:
7 oz sugar
Pour into jar and add scoby.
Let ferment 8 -14 days.
Then bottle with a little honey and leave until fizzy, probably 2-3 more days.
Then refrigerate and enjoy.
