Fry Bread - Original

A beloved recipe from "More with Less", the cookbook I started out with.

In 5 qt glass bowl combine:
20 oz all-purpose flour
1/2 t salt
2 t baking powder

Stir together and stir in:
12 oz warm water
4 oz milk (fresh milk, not soured)

Stir and fold in the mixing bowl. Let rest 10-15 minutes and fold and rest until it is springy. Let rest an hour or so then fold again until very smooth and it adheres to itself making a soft ball.

Divide into:
6 pieces - 6 oz each OR
8 pieces - 4.5 oz each

Form into snug balls. Rest a bit then pat and stretch into circles or ovals.

Fry in lard, or beef fat or avocado oil. Dough will puff and bubble. Turn when golden brown. Set on rack then wrap in a towel to keep soft and warm until ready to use.
