Fruit Cobbler 

Juicy peaches or berries under a delicate biscuit.

-11x14 size-
2 1/4 c white flour
1/4 sugar
2 t baking powder
1 1/4 t salt
3/4 c butter
1/2 to 3/4 c milk
1 t vanilla
Peaches with 1/4 c flour, 1/4 c sugar  OR
Berries sprinkled with 1/4 c flour, 1/2 c sugar
Apples with 2 T flour, 2 T sugar, cinnamon
-9x13 size-
1 1/2 c white flour
3 T sugar
1 1/2 t baking powder
1 t salt
1/2 c butter
1/4 to 1/2 c milk
1/2 t vanilla
Peaches with 1/4 c flour, 1/4 c sugar  OR
Berries sprinkled with 1/4 c flour, 1/2 c sugar
Apples with 2 T flour, 2 T sugar, cinnamon

Put fruit in 9x13 dish and heat in 400* oven about 5-10 min just until warm.  Measure all dry ingredients into mixer bowl with cookie paddles and mix thoroughly.  Mix in butter until mixture is crumbly.  Measure milk and vanilla into measuring pitcher.  Add all at once to dry ingredients and mix carefully until moistened, and "knead" about 5-10 times.  Roll dough out 1/4 inch thick on floured counter.  Lay on top of hot fruit and make slits like pie dough.  Bake 30-40 minutes at 375* until golden.
