Quick Bread - Fresh Cranberry Large recipe for making into 12 small bread pans. orange juice is very good in cranberry bread, but I don't keep it stocked so I have made this recipe to reflect that
Thaw slightly and roughly chop (french fry blade on my bosch)
24 oz fresh cranberries Toss with 1/4 c sugar and 2 T white flour Combine: 40 oz whole wheat pastry flour (8 c flour) 2 c white sugar 1 T baking powder 1 t baking soda 1 t salt In large bowl beat: 1 c unsalted butter, melted and cooled OR 8 oz melted coconut oil 4 eggs Stir in: 24 oz milk 8 oz whole milk yogurt Gently stir in well mixed dry ingredients. Line 12 small bread pans with parchment and bake at convection bake 350* about 45-60 minutes until internal temp is 190*.
