Hibiscus Syrup or Tea 

For mixing into sparkling water, kombucha, iced tea, or rum drinks! Or hot toddy in the winter! Or just as a drink by itself.

~Large quantity to make 16 qts of tea

In kettle boil:
1 gal water

In 2 gallon jar, Pour over:
16 oz dried hibiscus flowers
4-8 lemons (cut the skin very thinly off, cut white off, dice the lemon, then squeeze the lemon and add the whole thing)
1 oz stevia leaf (fresh dried, not processed).

Strain into 2 gallon jar and 12 qt cambro.
Repeat until you have 4 gallons (16 qts) nicely colored tea. Add sugar or honey to taste while yet room temperature.
~To Make 1 gallon easier
Boil 1 gallon water (9.5 kangan)
Pour over:
4 oz dried hibiscus flowers
Peel 1 or 2 lemons with a vegetable peeler and steep the peels.

Steep until cooled to room temp.
Add the juice from the lemons

Proceed with sweetening options below.

~Makes 4 qts of tea
In kettle boil:
4 c water

Pour over (in tea pot):
4 oz dried hibiscus flowers
2 lemons (cut the skin very thinly off, cut white off, dice the lemon, then squeeze the lemon and add the whole thing)
1/4 oz stevia leaf (fresh dried, not processed).

Let steep as it cools to room temp.

Strain into gallon jar. Boil 4 more cups water and pour over same flowers and lemon. Let steep until cooled to room temp. Strain into same jar.

Continue to steep and strain until it is quite weak.

~Sweeten To drink: Stir in about 1 c sugar (or 12 oz honey) to taste while still a bit warm.

~Sweeten To use as a syrup flavoring kombucha or hot tea:
Stir in 1 c sugar
12 oz (1 c) honey
Stevia to taste

Keep in the fridge.

~For a hot winter drink try:
Reheat syrup and infuse cinnamon, allspice and cloves.
OR use my mulling spices.

~Add brandy or rum to taste.

~Probably good to just add hibiscus to hot cider too.

~To make a more healthy drink try this:
Add dried elderflower 1 T per 1/4 c hibiscus flowers
lime
pineapple juice
orange juice
You may be able to use no sugar with this combination.
