Cranberry Bread 

Moist bread with flavorful bits of cranberries.

3 c orange juice
4 eggs
2 bags chopped cranberries
  (use french fry slicer blade)
1 c chopped walnuts
8 c spelt flour (40 oz grain)
4 c sugar
2 T baking powder
2 t baking soda
1/2 c butter

Sift flour, sugar, powder, soda together in mixer bowl with cookie whips.  Mix in butter until small crumbs form.  Mix in juice and eggs.  Mix only until moist.  Carefully stir in cranberries and nuts.  Bake 350* in 12 small bread pans or 6 regular size pans or 4 very large pans, sprayed well and floured, for 60-75 minutes.  Be sure to bake till dark brown and check for doneness with clean knife or toothpick.  It is often not done on inside when it looks done on outside.
