Waffles - Sourdough 

Copied from King Arthur. Thanks! Makes more than 4 'should' eat, but they toast well as left-overs.

For the starter: In a medium bowl, mix together the flour and sugar.

Stir in the milk and yogurt and starter. Cover and let sit at room temperature overnight.

For the batter: Beat together the eggs, butter, salt, and baking soda. Stir into the starter; it will immediately start to form bubbles.

Bake and enjoy.
10 oz (2 c) whole wheat pastry flour
1 oz (2 T) sugar
12 oz (1 1/2 c) whole milk
4 oz (1/2 c) whole milk yogurt
8 oz (1 c) unfed sourdough starter or discard

2 eggs
4 tablespoons melted unsalted butter
3/4 teaspoon salt
1 t baking soda
