Frosting - Vanilla Buttercream
In mixer bowl with whips beat on medium speed:
5 sticks soft unsalted butter about a minute until light and fluffy. Add: 20 oz powdered cane sugar pinch of salt beat another minute. Add: 1 T vanilla 2 oz (1/4 c) heavy cream beat a few minutes until very light and fluffy. Makes enough to generously frost 24 cupcakes or 2 ten inch layers or 2 9x13 layers.
