Ground Beef for a crowd 

Roasted in hotel pans.

In one hotel pan -
20 lb ground beef
several onions
3 T salt

Roast with lid on at convection 500*. Stir after 30 minutes. Stir again 30 minutes, and one more time. (1 1/2 hours total). Then break it up well with a potato masher and roast again stirring about every 10 minutes as the top browns. This may take only another 30 minutes or so, it depends on how hot the oven stays. It is OK to have the oven preheating, but it browns faster.

Total cook time: 2 - 2 1/2 hours.
