Main dish - Barley Salad A macaroni style salad with healthy barley instead of pasta. Smaller recipe:
Soak 1 c barley in water with a t yogurt added overnight on counter. In the morning rinse well and boil in 3 c fresh water with 1/2 t salt added. When chewy tender rinse in cool water to rinse off the sticky starch. To the cooled barley stir in: mayonnaise to taste yellow or grainy brown mustard fresh black pepper to taste 1/2 of a 24 oz jar Trader Joes bread and butter pickles roughly chopped with some of the pickle juice including all the spices at the bottom hard boiled eggs, about 5 ham diced cheddar cheese To taste stir in: onion celery peppers peas Large recipe:

When chewy tender rinse in cool water to rinse off the sticky starch. To the cooled barley stir in: mayonnaise to taste yellow or grainy brown mustard fresh black pepper to taste 1 whole 24 oz jar Trader Joes bread and butter pickles roughly chopped with about half of the pickle juice including all the spices at the bottom hard boiled eggs, about 14 ham diced cheddar cheese To taste stir in: onion celery peppers peas This recipe made about 28 cups of salad, nearly filling my 32 cup Tupperware bowl. Add cheese just before serving because I think it may get soggy as the salad keeps in the fridge.
