Bread - Connie's Oat Bread (Old Recipe) 

Dense and chewy, perfect!

1/2 c butter
1 c honey (12 oz)
2 T yeast
2 T salt
5 c milk
5 c oats
4 eggs
12-13 c bread flour

Warm milk in microwave in measure pitcher (about 3-5 minutes) until very warm bath temperature.  Put oats, eggs, flour, butter, honey, yeast, and salt in mixer with dough hook.  Add warm milk and mix then knead 1-2 minutes on speed #1.  Dough will still be sticky but should begin to clean sides of bowl.  Put dough in very large sprayed bowl in the oven to rise for about 60 minutes (Turn oven on just until it clicks on, below warm setting.).  Punch down and knead a little with your hand.  Rise another 20 minutes.  After it has risen again, punch down, knead by hand again and form into loaves.  Use 4 very large pans and warm sprayed pans in oven.  Place loaves in pans in warm oven to rise about 30 minutes, until they are rounded at top of pans.  Turn oven on to 350* without removing bread, and bake for 20-25 minutes.  It should sound hollow and be lightly browned.  Turn out onto racks and put towels over them to keep the crust soft.
