Foccia Bread (Old Recipe) 

Light flat bread almost like a biscuit.

2 T yeast
2 c warm water
1 T sugar
1/4 c oil
1/4 c soft lard
1 t salt
5 c white bread flour

In mixer bowl with dough hooks measure yeast into warm water and sugar.  Let sit until foamy, a few minutes.  Add oil, lard, salt and 3 c flour.  Mix 3 minutes.  Add last 2 c flour and knead only until smooth.  Rise in warm oven in oiled bowl 60 minutes. Generously oil 2 cookie sheets, using 1-2 T oil each.  Roll and pat dough onto both cookie sheets.  Butter tops (or brush with olive oil) and sprinkle with salt and rosemary.  Let rise on pans about 20-30 minutes in warm oven.  Bake 400* 20-25 minutes (switching racks half through) until golden.
