Soup - Pumpkin 

Creamy simple soup from homemade pumpkin.

~4 qt pot
In 8 oz butter saute:
1 large onion
1 large carrot
1 celery stalk
salt to taste
saute until caramelized and sweet.

Add:
1 qt homemade pumpkin
pumpkin pie spice to taste
saute a bit to marry the flavors a bit

Stir in:
16 oz chicken broth
20 oz milk
maple syrup to taste (a lot of it, like 1/4-1/2 cup, because it brings out the pumpkin pie spice flavors)

Bring to a simmer. Immersion blend.

Add more milk or butter to taste and bring it to the desired thickness.
