Sandwich Bread - Milk and Honey 

This uses only milk and honey and can be either white or wheat! With a small amount of yeast for lightness.

~88 oz

Mix:
28 oz milk
4 oz honey
16 oz starter

Add:
40 oz flour
2 T salt

Mix until it cleans bowl and makes shaggy ball.

Rest 30-60 min

Knead in:
2 t yeast

Knead and/or stretch and fold until makes perky ball and a gentle windowpane.

Rise in 2 gal jar

Form:
4 regular size sandwich pans - 22 oz each loaf

Bake with steam 30-35 minutes convection bake 350* until golden brown and 200* internally.
~44 oz can be mixed by hand

Mix:
14 oz milk
2 oz honey
8 oz starter

Add:
20 oz flour
1 T salt

Mix until it cleans bowl and makes shaggy ball.

Rest 30-60 min

Knead in:
1 t yeast

Knead and/or stretch and fold until makes perky ball and a gentle windowpane.

Rise in 1 gal jar

Form:
4 very small sandwich loaves - 11 oz ea
2 regular size sandwich pans - 22 oz ea

Bake with steam 30-35 minutes convection bake 350* until golden brown and 200* internally.
