Pancakes - Sourdough German Pancake 

This is made much thicker than my usual German Pancakes. A great healthy option as all the flour is starter, therefore is fermented!

1 pancake in 12 inch skillet
serves 4-6
Preheat oven and cast iron skillet

Mix:
6 eggs
14 oz starter (can be discard)
3 oz milk
1/2 t salt
1 t vanilla
1 oz maple syrup or honey

Melt:
about 3 oz coconut oil or tallow or lard in the 12 inch cast iron skillet

Pour batter into hot skillet

Bake 15 min at convection roast or airfry 425*.

Serve with:
rhubarb sauce
lemon and powdered sugar
fruit jam
