Hot Cereal - Nine Grain Fermented 

Soak Azure's nine grain cereal overnight in filtered water and whey.

~8 qt pot size
In cooking sized pot:
3 c grains
filtered water (maybe not kangan) to cover by 1/2 to 1 inch
about 1/2 c whey

In the morning:
Boil 3 c water
Add to the fermented grains in the cooking pot.

Add:
1 T salt

Bring to a nice boil. Cover but stir frequently to keep from sticking on the bottom.

When it is thickened stir in:
2 c milk mixed with
3 egg
Simmer and stir gently until it thickens again.
~Soak overnight to ferment the grains

In cooking sized pot:
1 c grains

about 2 T whey

In the morning:
Boil 1 c water
Add to the fermented grains in the cooking pot.

Add:
1 t salt

Bring to a nice boil. Cover but stir frequently to keep from sticking on the bottom.

When it is thickened stir in:
1/2 c milk mixed with
1 egg
Simmer and stir gently until it thickens again.

Add currants for sweetness
Add butter
Add more milk to taste
