Cinnamon Rolls - Quick 

An uncomplicated recipe for when you need to surprise someone!

~Dough for 24 cinnamon rolls
In mixer bowl add:
1 1/2 c very warm milk
1/2 c butter
2 T yeast
1/4 c sugar
1 t salt
1 eggs

Add:
3 c white flour
Mix into a smooth batter-like dough.

Add:
up to 2 more cups flour to make a soft but not too sticky dough.

Knead until it is soft and supple, just a minute or two. If it seems too sticky, let it rest 5 min and knead again gently.

Rise until double.

~Filling
Mix in bowl:
6 oz brown sugar
1/4 c all purpose flour
2 t cinnamon
1 t pumpkin pie spice (this was really good)
pinch salt
1 oz very soft unsalted butter

Roll and pat into very long rectangle only 6 in wide with dough 1/4 inch thick. Moisten dough with wet hands and spread with filling. (This keeps the filling inside the rolls very well.) Roll up and cut into 24 rolls or so, whatever you like.

Place 4x6 on 1/2 sheet size baking sheet.

Cover with damp towel. Rise just 20 min or so.

Bake 375* about 12-15 min or so.
