Breakfast Casserole - Baked Fritatta 

Great way to eat eggs and veggies for a group. Leftovers make into a breakfast burrito, especially in the air fryer.

~10x14 glass casserole dish
Whip together:
24 eggs
4 oz milk
1 t salt

Saute veggies - lots of them - in cast iron skillet. Put into casserole dish until it is covering the bottom and 1/3 to 1/2 full up the sides. Lots of veggies.

I like:
onions and a mix of greens
onions and peppers and zucchini

Pour eggs over veggies and bake just until set but a little jiggly in the middle.
350* convection roast for 15-20 minutes.
