Waffles - for a crowd 

For Nathaniel's Wedding!

~Base Recipe x 2 for 12 big (48 squares)
Mix and let rise:
48 oz  whole milk (1.5 qt)
32 oz  sourdough starter
40 oz  whole wheat pastry flour (2.5 lb)

Beat together then mix into batter:
12 eggs
1 lb

Sprinkle over and mix gently just before baking the waffles:
4 t salt
4 t soda

-fits into 12 qt cambro

Mix 3 times for 144 squares
7.5 lb flour

Mix 4 times for 192 squares
128 oz starter
10 lb flour
6 qt milk (1.5 gal) (3 jars)
4 dozen eggs
4 lb butter

~Sourdough starter for 192 squares
need 128 oz - takes nearly 5 lb flour

mix 1: 2 oz makes 12 oz
mix 2: 12 oz makes 74 oz

mix 3: 74 oz - 12 oz = 62 oz finished
12 oz makes 74 oz - 2 oz to keep (don't forget)
Total: 62 + 72 = 134 oz
~Base Recipe for 6 big (24 squares)
Mix and let rise:
24 oz  whole milk
16 oz  sourdough starter
20 oz  whole wheat pastry flour

Beat together then mix into batter:
6 eggs
8 oz melted unsalted butter

Sprinkle over and mix gently just before baking the waffles:
2 t salt
2 t soda

-fits into 5 qt bowl
