Pancakes - Crepes, better 

Working on a really great textured crepe! Also see Sally's Baking Addiction 'Crepe Cake'.

~Making about 14 crepes
Gently melt and let cool:
1 1/2 oz unsalted butter
In bowl, to be used with immersion blender:
6 oz milk
4 oz water
2 eggs, at room temperature
1 T granulated sugar
1/8 t salt
2 t vanilla
5 oz whole wheat pastry flour
Add the cool melted butter

Blend with immersion blender until silky smooth, the texture of cream.

Chill for 30-60 minutes or overnight.

Remove from fridge, stir and cook very thin!
