GF - Artisan bread 

~Makes 4 small loaves
In bosch or kitchen aid mixer bowl whisk together:
760g water
Whisk in with hand whisk:
34g psyllium husk powder
It will form a gel very quickly.

Add and whisk:
30g sugar
18g salt
16g (4 t) yeast
30g olive oil
16g apple cider vinegar

Add gradually as you mix with dough hook:
680g namaste flour

Knead and rest until smooth and it cleans the bowl making a perky ball. Optionally, (Take out of mixer and knead and rest on moist surface until very smooth and perky.) Allow about 10 min for resting and kneading or stretch and folding.

Shape 396g loaves on moist counter, but don't add too much water to the loaves.

Dust generously with flour and rise in 4 cereal sized bowls. OR directly on the counter. Cover with a towel to prevent drying out.

Rise the formed loaves in warm spot until puffy or nearly doubled.

Score top

Bake 400* on baking steel with steam 40-45 min until 210*-215* internal temp. Cool thoroughly on a rack.

Be sure to cool before slicing or it will be gummy

380g water
Whisk in with hand whisk:
17g psyllium husk powder
It will form a gel very quickly.

Add and hand whisk:
15g sugar
9g salt
8g (2 t) yeast
15g olive oil
8g apple cider vinegar

Add gradually as you mix with dough hook:
340g namaste flour

Knead and rest until smooth and it cleans the bowl making a perky ball. Take out of mixer and knead and rest on moist surface until very smooth and perky. Allow about 30 min for resting and kneading or stretch and folding.

Shape 396g loaves on moist counter, but don't add too much water to the loaves.

Dust generously with flour and rise in 2 cereal sized bowls. Cover with a towel to prevent drying out.
