Dressing - Basic Blender Always makes a creamy and healthy dressing. We use about 1/4 to 1/2 cup per serving! Makes 3 cups dressing
~In blender add: 1/4 of an onion 1 large clove garlic 2 eggs 2 oz vinegar 1 t salt Add olive oil SLOWLY, until it makes your desired thickness. Eventually at 3 cups it will not 'spin' much anymore. Optionally add: fresh dill and parsley mustard ketchup tomatoes chili powder cayenne jalapeno pepper any peppers -Sometimes I add an additional egg as it blends (about halfway full) to fill my 6 cup blender very full. This seems to help the dressing to thicken even more. -I like to add very finely diced red onion or sweet onion to the dressing. It really adds a depth of flavor and tempers the onion harshness. -I have even added very small diced carrot or green and red peppers for color and added volume.
