Cookie Bars - Fruit Bars 

Similar to the jam bars but made with a fresher fruit compote and more oats in the dough.

~Makes ONE 8x8 pan
Make 3 cups thick compote, any type of fruit.

Mix until combined and crumbly:
7 oz oats
5 oz whole wheat pastry flour
6 oz unsalted butter
5 oz sucanat
1/2 t baking powder
1/2 t salt

Stir in:
optional: 2 oz chopped nuts

Dump half of the oat crumbles into greased pan and press firmly to make the bottom crust. Roll with small roller.

Pour fruit filling over.

Sprinkle remaining half of the oat crumbles over and press lightly with palm of hand. Maybe dot with butter and maybe sprinkle very lightly with salt.

Bake 25 minutes at convection bake 400* until filling bubbles a bit and oat crumbles are lightly golden.

Let cool in pan 15 minutes or so. Remove to cut when cool.
